Whats the difference?
Traditional Stereo Mastering involves working a stereo mixdown of a song, where all the elements of a mix are combined into a simple left/right signal. This is great for 90% of projects and is how the majority of commercial mastering is perfomed. However, in some cases better results can be acheived by separating out certain elements into sub mixes(or stems) allowing these to be processed and balanced separately at the mastering stage.
So instead of just one stereo file for each song, you might have up to 5 separating Bass, Vocals, Drums etc. This allows us to process each stem separately before combing them into one stereo mix to be mastered as a whole.
So for example we could then widen the stereo spread of guitars without affecting the drums, or add top end to the vocals without changing the rest of the mix.
So which should i choose?
In most cases Stereo mastering is going to be the type to go for. Stem Mastering will suit those who are mixing themselves, perhaps in a home studio environment and feel that there is something lacking in the mix, maybe a particular problem element.
